Al Dente Timing
Cook pasta 1-2 minutes less than package directions for true al dente. Fresh pasta takes 2-4 minutes, dried takes 8-12 minutes. The pasta should have a slight firmness when bitten. It will finish cooking when tossed with the hot sauce.
